Ingredients

  • 2 Tbsp flaxseed meal
  • 2 Tbsp water
  • ¼ cup soy flour
  • ¼ cup amaranth
  • 1 Tbsp pumpkin pie spice
  • 1 Tbsp cornstarch
  • ½ tsp baking powder
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tsp granulated sweetener of choice
  • cup pumpkin puree
  • 1 tsp honey
  • 2 tsp coconut oil, melted
  • ¼ cup milk of choice
  • ¼ tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F and prepare a cookie sheet.
  2. Mix flaxseed meal and water in a small bowl and set aside to create a flax egg.
  3. In a medium bowl, combine soy flour, amaranth, pumpkin pie spice, cornstarch, baking powder, baking soda, salt, and sweetener.
  4. In another bowl, mix pumpkin puree, honey, coconut oil, milk, and vanilla extract.
  5. Add the flax egg to the wet ingredients and mix well.
  6. Combine wet and dry ingredients, stirring until a sticky dough forms.
  7. Scoop dough onto the prepared cookie sheet using a No. 50 scoop.
  8. Bake for 9-10 minutes until the outside is firm but still soft inside.
  9. Allow cookies to cool before serving.
