Ingredients

Version with Bourbon

  • cup raw almonds
  • cup raw pecans
  • 1 heaping cup pitted dates
  • 2 pinches sea salt
  • ½ tsp pure vanilla extract
  • cup bourbon

Version without Bourbon

  • ½ cup raw almonds
  • ¾ cup raw pecans
  • 1 pinch sea salt
  • ¼ tsp pure vanilla extract
  • 1 cup pitted dates

Instructions

  1. Soak the pitted dates in bourbon for about 15 minutes.
  2. Process the almonds and pecans in a food processor until finely chopped.
  3. Add the vanilla extract and sea salt, then pulse to combine.
  4. Add the soaked dates one at a time until a dough forms, adding reserved bourbon if needed.
  5. Press the dough into a parchment-lined dish and sprinkle with sea salt.
  6. Freeze for 15 minutes, then cut into 12 squares.
  7. For the non-boozy version, process dates and then mix with other ingredients to form a dough, then freeze.
