Ingredients

Crust

  • cups almond flour
  • ¼ cup coconut flour
  • ¼ cup maple syrup
  • cup coconut oil, melted
  • 1 tsp vanilla
  • ¼ tsp salt

Filling

  • ½ cup melted coconut oil
  • ¼ cup maple syrup
  • cup coconut sugar
  • 1 tsp vanilla
  • 1 tbsp almond milk
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 inch pan with grease or parchment paper.
  2. In a small bowl, mix together almond flour, coconut flour, maple syrup, coconut oil, vanilla, and salt until well combined, then press into the bottom of the pan.
  3. Bake the crust for 15-17 minutes or until slightly golden brown and let it cool completely.
  4. In a saucepan, heat coconut oil, coconut sugar, maple syrup, and vanilla until boiling, stirring consistently for about 3-4 minutes.
  5. Once boiling, stir constantly and let it bubble for two minutes before turning off the heat.
  6. Stir in almond milk and chopped pecans, then pour the mixture over the cooled crust.
  7. Bake in the oven for 20-22 minutes.
  8. Let cool on the counter for 15 minutes, then refrigerate for at least two hours before serving or cutting.
