Cauliflower Mushroom Mac and Cheese

Instructions
- Preheat the oven to 375°F.
- Boil the pasta according to package instructions, adding the cauliflower in the last 2 minutes.
- Drain the pasta and cauliflower, then return the pan to heat.
- Sauté garlic and onion in olive oil until translucent and fragrant.
- Add mushrooms and cook until golden brown, avoiding salt until nearly done.
- Once mushrooms are nearly done, add butter and mix until melted, then add flour.
- Cook the flour mixture for about 1 minute, then slowly stir in the milk until thickened.
- Add salt, pepper, and Parmesan cheese, then combine with the pasta and cauliflower.
- Transfer to a baking dish, sprinkle with breadcrumbs and extra cheese if desired.
- Bake for 15 minutes or until bubbling and brown.
