Cauliflower Mushroom Mac and Cheese

Ingredients

The pasta and vegetables

  • ½ lb. Penne Pasta
  • 1 head Cauliflower, cut into small florets
  • 8 oz. Baby Bella Mushrooms

The sauce

  • 2 tsp. garlic, minced
  • cup onion, finely chopped
  • 2 tbsp. Flour
  • 2 tbsp. Butter
  • 1 cup 2% milk
  • ½ cup Parmesan cheese, grated
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Boil the pasta according to package instructions, adding the cauliflower in the last 2 minutes.
  3. Drain the pasta and cauliflower, then return the pan to heat.
  4. Sauté garlic and onion in olive oil until translucent and fragrant.
  5. Add mushrooms and cook until golden brown, avoiding salt until nearly done.
  6. Once mushrooms are nearly done, add butter and mix until melted, then add flour.
  7. Cook the flour mixture for about 1 minute, then slowly stir in the milk until thickened.
  8. Add salt, pepper, and Parmesan cheese, then combine with the pasta and cauliflower.
  9. Transfer to a baking dish, sprinkle with breadcrumbs and extra cheese if desired.
  10. Bake for 15 minutes or until bubbling and brown.
