Baked Polenta Fries
Ingredients
The polenta base

polenta

fine grain sea salt
The toppings

grated Parmesan cheese

melted clarified butter or olive oil
Instructions
- Bring the milk and water to a boil in a large saucepan.
- Slowly add the polenta while stirring constantly.
- Stir in the salt and continue cooking until the mixture thickens.
- Remove from heat and stir in the Parmesan cheese.
- Spread the polenta mixture onto a baking sheet to a thickness of ½ inch and let it cool.
- Chill in the refrigerator for at least an hour or overnight.
- Cut the chilled polenta into fry shapes.
- Rub each fry with clarified butter or olive oil and sprinkle with salt.
- Bake in a preheated oven at 450°F for 20 minutes, flipping halfway through.
