Baked Polenta Fries

Ingredients

The polenta base

  • 2 cups organic milk
  • 2 cups water
  • 1 ½ cups polenta
  • 1 teaspoon fine grain sea salt

The toppings

  • ½ cup grated Parmesan cheese
  • ¼ cup melted clarified butter or olive oil

Instructions

  1. Bring the milk and water to a boil in a large saucepan.
  2. Slowly add the polenta while stirring constantly.
  3. Stir in the salt and continue cooking until the mixture thickens.
  4. Remove from heat and stir in the Parmesan cheese.
  5. Spread the polenta mixture onto a baking sheet to a thickness of ½ inch and let it cool.
  6. Chill in the refrigerator for at least an hour or overnight.
  7. Cut the chilled polenta into fry shapes.
  8. Rub each fry with clarified butter or olive oil and sprinkle with salt.
  9. Bake in a preheated oven at 450°F for 20 minutes, flipping halfway through.
