Ingredients

The polenta

  • 1 cup quick-cook polenta meal
  • 3 cups water or broth
  • 1 teaspoon salt
  • 1 tablespoon mixed fresh herbs (like rosemary, sage, thyme, oregano) or 2 teaspoons dried herbs
  • 2 tablespoons unsalted butter or vegan butter

Optional add-ons

  • ½ cup parmesan cheese
  • 2 cloves pressed fresh garlic

For the marinara dipping sauce

  • 2 cups Quick and Easy Marinara or store bought
  • 2 cloves garlic, minced
  • ¼–½ teaspoon red pepper flakes
  • 1 tablespoon capers, chopped
  • 1 tablespoon kalamata olives, chopped
  • to taste burrata or fresh mozzarella slices or vegan cheese

Instructions

  1. Boil water and add salt, then whisk in polenta slowly while stirring.
  2. Reduce heat and simmer for about 5 minutes, stirring occasionally, then cover and let sit for another 10 minutes.
  3. Pour polenta into a flat pan, smoothing it out to about ¼ inch thick, and refrigerate for 30 minutes.
  4. Flip the pan onto a cutting board to release the polenta and cut into fry shapes.
  5. Brush fries with olive oil and place them in the air fryer, ensuring space between each fry.
  6. Air fry at 425°F for 15 minutes, then toss and cook for an additional 5 minutes until golden brown.
  7. For the marinara sauce, sauté garlic and red pepper flakes in olive oil, then add marinara, capers, and olives, heating until warm.
  8. Top the sauce with burrata or mozzarella and broil until the cheese is soft and melty.
