burrata or fresh mozzarella slices or vegan cheese
Instructions
- Boil water and add salt, then whisk in polenta slowly while stirring.
- Reduce heat and simmer for about 5 minutes, stirring occasionally, then cover and let sit for another 10 minutes.
- Pour polenta into a flat pan, smoothing it out to about ¼ inch thick, and refrigerate for 30 minutes.
- Flip the pan onto a cutting board to release the polenta and cut into fry shapes.
- Brush fries with olive oil and place them in the air fryer, ensuring space between each fry.
- Air fry at 425°F for 15 minutes, then toss and cook for an additional 5 minutes until golden brown.
- For the marinara sauce, sauté garlic and red pepper flakes in olive oil, then add marinara, capers, and olives, heating until warm.
- Top the sauce with burrata or mozzarella and broil until the cheese is soft and melty.
