Instructions
- Preheat the oven to 450°F and spray two baking sheets with olive oil.
- Arrange the polenta fries on one baking sheet and spray the tops with olive oil, seasoning with salt and pepper.
- Place the tomatoes and garlic cloves on the second baking sheet, spraying them with oil as well.
- Bake the tomatoes for 10 minutes, stirring after 5 minutes, while baking the fries for 25-30 minutes until crisp and golden-brown.
- Transfer the roasted tomatoes and garlic to a food processor, adding olive oil, balsamic vinegar, basil leaves, and red pepper flakes.
- Process until almost smooth and add salt to taste before serving the sauce with the polenta fries.
