Baked Polenta Fries with Garlic Tomato Sauce

Ingredients

The fries

  • 24 oz polenta tubed
  • 1 tsp olive oil
  • salt to taste salt
  • pepper to taste pepper

The sauce

  • 3 large roma tomatoes
  • 3 cloves garlic
  • 1 tsp balsamic vinegar
  • 3 leaves basil
  • pinch crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 450°F and spray two baking sheets with olive oil.
  2. Arrange the polenta fries on one baking sheet and spray the tops with olive oil, seasoning with salt and pepper.
  3. Place the tomatoes and garlic cloves on the second baking sheet, spraying them with oil as well.
  4. Bake the tomatoes for 10 minutes, stirring after 5 minutes, while baking the fries for 25-30 minutes until crisp and golden-brown.
  5. Transfer the roasted tomatoes and garlic to a food processor, adding olive oil, balsamic vinegar, basil leaves, and red pepper flakes.
  6. Process until almost smooth and add salt to taste before serving the sauce with the polenta fries.
