Ingredients

Fajita Spice Mix

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp cumin
  • tsp cayenne
  • ½ tsp sugar
  • ½ tsp salt

Chicken Pasta

  • 1 Tbsp cooking oil
  • 1 lb boneless skinless chicken breast
  • 1 each bell pepper
  • 1 each yellow onion
  • 15 oz fire roasted diced tomatoes
  • 4 oz cream cheese
  • 8 oz pasta (any shape)
  • 2 each green onions, sliced

Instructions

  1. Combine the spices for the fajita spice mix in a bowl and set aside.
  2. Dice the onion and bell pepper, and cut the chicken breast into ½-inch cubes.
  3. Boil water in a large pot for the pasta. Add the pasta and cook until tender, then drain.
  4. Heat oil in a skillet over medium heat, add the chicken and fajita spice mix, and sauté until cooked through.
  5. Remove the chicken and add the onion and bell pepper to the skillet, sautéing until softened.
  6. Add the diced tomatoes and cream cheese to the skillet, stirring until the cream cheese melts.
  7. Return the cooked pasta and chicken to the skillet, mixing until well combined.
  8. Top with sliced green onions and serve.
