Instructions
- Combine the spices for the fajita spice mix in a bowl and set aside.
- Dice the onion and bell pepper, and cut the chicken breast into ½-inch cubes.
- Boil water in a large pot for the pasta. Add the pasta and cook until tender, then drain.
- Heat oil in a skillet over medium heat, add the chicken and fajita spice mix, and sauté until cooked through.
- Remove the chicken and add the onion and bell pepper to the skillet, sautéing until softened.
- Add the diced tomatoes and cream cheese to the skillet, stirring until the cream cheese melts.
- Return the cooked pasta and chicken to the skillet, mixing until well combined.
- Top with sliced green onions and serve.
