Spicy Creamy Chicken Cajun Pasta

Ingredients

The pasta

  • 2 servings fettuccine noodles

The meat

  • 1 strip thick cut bacon, chopped
  • 1 cooked chicken breast finely chopped

The vegetables

  • ½ cup green pepper, finely chopped
  • cup white onion, finely chopped
  • 1 clove garlic, minced
  • 1 Tbsp shallot, minced
  • 1 Tbsp jalapeño, minced (optional)
  • ¼ cup fresh spinach, chopped
  • ¼ cup green onion, chopped (for garnish)

The spices and sauces

  • ½ tsp cajun seasoning
  • pinch crushed red pepper
  • ½ cup half and half

Instructions

  1. 1. Boil fettuccine noodles in salted water until al dente.
  2. 2. In a large sauté pan, cook the chopped bacon over medium heat until done.
  3. 3. Add green pepper to the pan and cook until it starts to soften.
  4. 4. Add onion, garlic, shallot, and jalapeño, cooking until fragrant and softened.
  5. 5. Sprinkle cajun seasoning and crushed red pepper onto the veggies and stir to combine.
  6. 6. Add spinach and toss for about 30 seconds until it starts to soften.
  7. 7. Lower the heat to medium-low and slowly pour in the half and half, stirring continuously.
  8. 8. Season the sauce with salt and pepper if necessary, then add the chopped chicken.
  9. 9. Spoon the cooked noodles into the cream sauce and stir to coat.
  10. 10. Serve hot, garnished with chopped green onion or parsley.
