Instructions
- Season the chicken with Cajun seasoning and let it rest.
- Heat avocado oil in a pan and cook the chicken until browned and cooked through.
- Remove the chicken and cook zucchini, bell pepper, and jalapeños in the same pan until softened.
- Add tomatoes, green onions, and tomato paste to the vegetables and cook for a few minutes.
- Boil the farfalle pasta in salted water until al dente.
- Stir in garlic and crushed red pepper into the vegetable mixture, then add half and half and simmer until thickened.
- Combine the cooked pasta with the sauce and add parmesan cheese, mixing until creamy.
- Serve immediately with additional toppings.
