Instructions
- Mix ground chicken, 1 Tbsp vegetable oil, baking soda, kosher salt, and water in a bowl until smooth and sticky, then set aside.
- Combine oyster sauce, hot chili paste, fish sauce, and brown sugar in a small bowl and set aside.
- Heat remaining vegetable oil in a skillet over medium-high heat, then cook shallots until softened and golden.
- Add the ground chicken mixture to the skillet and cook undisturbed until it begins to set, then break it into small pieces.
- Pour the sauce mixture over the chicken and cook until the sauce clings to the meat.
- Add basil leaves to the pan and let them wilt, then toss to combine.
- Serve the stir-fry with steamed rice and lime wedges.
