Basil Chicken Stir-Fry

Ingredients

The stir-fry

  • 1 lb ground chicken
  • 4 Tbsp vegetable oil
  • ½ tsp baking soda
  • ¼ tsp kosher salt
  • ¼ cup oyster sauce
  • 3 Tbsp hot chili paste (sambal oelek)
  • 1 Tbsp fish sauce
  • 2 tsp light or dark brown sugar
  • 3 large shallots, thinly sliced
  • 6 oz holy basil or sweet basil leaves

For serving

  • to taste steamed rice
  • to taste lime wedges

Instructions

  1. Mix ground chicken, 1 Tbsp vegetable oil, baking soda, kosher salt, and water in a bowl until smooth and sticky, then set aside.
  2. Combine oyster sauce, hot chili paste, fish sauce, and brown sugar in a small bowl and set aside.
  3. Heat remaining vegetable oil in a skillet over medium-high heat, then cook shallots until softened and golden.
  4. Add the ground chicken mixture to the skillet and cook undisturbed until it begins to set, then break it into small pieces.
  5. Pour the sauce mixture over the chicken and cook until the sauce clings to the meat.
  6. Add basil leaves to the pan and let them wilt, then toss to combine.
  7. Serve the stir-fry with steamed rice and lime wedges.
