Spicy Basil Chicken

Ingredients

  • 2 tsp olive oil
  • ¼ cup minced shallots
  • 3 cloves garlic, thinly sliced
  • 4 pieces skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp fish sauce
  • 1 packet Stevia
  • 2 tsp lower-sodium soy sauce
  • tsp chili paste with garlic
  • 1 tsp water
  • ½ tsp cornstarch
  • tsp sea salt
  • cup sliced basil leaves

Instructions

  1. Heat a large nonstick skillet over medium-high heat and add olive oil.
  2. Add shallots and garlic to the pan and cook until fragrant.
  3. Add the chicken and cook until done, about 13 minutes.
  4. In a small bowl, combine fish sauce, Stevia, soy sauce, chili paste, water, cornstarch, and salt, whisking together.
  5. Add the sauce mixture to the pan and cook until it thickens, stirring to coat the chicken.
  6. Remove from heat, stir in basil, and serve.
