Herbed Cod Papillote

Ingredients

The fish

  • 2 4oz cod filets

The herbs and vegetables

  • cup chopped chives
  • ¼ cup chopped tarragon
  • ½ cup chopped cherry tomatoes

The spread

  • 3 tbsp Brummel & Brown organic buttery yogurt spread

Seasoning and wrapping

  • to taste salt
  • to taste pepper
  • 2 large pieces parchment paper

Instructions

  1. Preheat the oven to 350°F.
  2. Place one cod filet on each piece of parchment paper and season with salt and pepper.
  3. Top each filet with the herb mixture.
  4. Divide the buttery spread and place it on top of each piece of fish.
  5. Fold the parchment paper tightly around the fish to create sealed packets.
  6. Arrange the packets on a baking sheet and bake for approximately 15 minutes.
  7. Cut open the packets to serve, either directly in the parchment or on a plate.
