Jamaican Steamed Fish

vegetables (carrots, chayote, sliced)

fish stock (adjust with more or less)

Instructions
- Rinse the fish, drain, and pat dry; rub with lime or lemon.
- Season the fish with salt, garlic, ginger, thyme, and pepper; mix well and marinate in the fridge for 30 minutes or overnight.
- Heat oil in a large skillet and sauté garlic, paprika, thyme, onion, and all spice for about two minutes.
- Add the vegetables starting with the toughest ones, followed by the fish stock; bring to a boil and simmer for 5 minutes.
- Place the fish into the boiling stock, add tomato, green onion, and scotch bonnet pepper.
- Spoon stock over the fish, cover, and steam on medium heat until tender, about 3-5 minutes per side.
- Just before serving, add butter on top of the fish.
