Instructions
- Trim and rinse the snapper fillets, then pat them dry.
- Mix Cajun seasoning, cracker meal, and brown sugar on a plate.
- Press one side of the snapper fillets into the seasoning mixture to coat evenly.
- Heat olive oil in a hot sauté pan and add the seasoned snapper fillets, seasoned side down.
- Cook the fillets undisturbed until browned, then flip to sear the other side.
- Remove the fillets from the pan and place them in a baking dish, seasoned side up, adding a little water to keep them moist.
- Bake in a preheated 350°F oven for 15 minutes.
- For the fruit salsa, mix diced fruit, onions, cilantro, lime juice, and salt together.
- For the lime margarita sauce, melt butter in a small sauté pan, then add brown sugar and blend.
- Add lime juice and tequila, allowing the alcohol to burn off, then add the remaining butter and thicken the sauce.
- Serve the snapper with the fruit salsa and lime margarita sauce.
