Pecan Encrusted Red Snapper

Instructions
- Chop the pecans and mix them with bread crumbs and Cajun seasoning.
- Spread honey on each fillet and press the honey side into the pecan mixture.
- Heat olive oil in a hot pan and place the snapper, pecan side down, to brown for about 1 minute.
- Turn the snapper over and sear for another minute, then place it in a baking dish with water.
- Bake in a 350°F oven for about 10 minutes.
- For the sauce, melt butter in a small pan, add brown sugar, lime juice, and tequila, allowing the alcohol to burn off.
- Add the remaining butter and let the sauce thicken before serving.
