Pecan Encrusted Red Snapper

Ingredients

The snapper

  • 14 oz snapper fillets
  • ½ cup pecans, finely chopped
  • ¼ cup bread crumbs
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon honey

Lime Margarita Sauce

  • tablespoon butter
  • tablespoon brown sugar
  • juice from one lime
  • ounce tequila

Instructions

  1. Chop the pecans and mix them with bread crumbs and Cajun seasoning.
  2. Spread honey on each fillet and press the honey side into the pecan mixture.
  3. Heat olive oil in a hot pan and place the snapper, pecan side down, to brown for about 1 minute.
  4. Turn the snapper over and sear for another minute, then place it in a baking dish with water.
  5. Bake in a 350°F oven for about 10 minutes.
  6. For the sauce, melt butter in a small pan, add brown sugar, lime juice, and tequila, allowing the alcohol to burn off.
  7. Add the remaining butter and let the sauce thicken before serving.
