Instructions
- Cut the red snapper into small rectangular pieces and place in a large bowl.
- Preheat a cooking pan over medium/high heat and add cooking oil.
- Season the fish with sea salt, black pepper, and Creole seasoning, then coat with ¼ cup of flour.
- In a separate bowl, whisk together the eggs and heavy whipping cream until smooth.
- Prepare two large zip lock bags; in one, combine 1 cup of flour, garlic powder, and cilantro flakes, and in the other, combine panko and Italian breadcrumbs.
- Coat the fish in the egg mixture, then transfer to the flour bag and coat evenly.
- Return the fish to the egg mixture, then coat in the breadcrumb bag.
- Cook each piece of fish for 3 to 4 minutes on each side until golden brown and crispy.
- Serve hot.
