Ingredients

The fish

  • 1 lb Fresh Red Snapper

The batter and coating

  • 2 Large Organic Eggs
  • 1 cup Heavy Whipping Cream
  • cup All Purpose Flour
  • 1 cup Italian Breadcrumbs
  • ½ cup Panko Breadcrumbs
  • 1 tsp Cilantro Flakes
  • 1 tsp Garlic Powder
  • ½ tsp Sea Salt
  • 1 tsp Black Pepper
  • 1 tsp Creole Seasoning

Instructions

  1. Cut the red snapper into small rectangular pieces and place in a large bowl.
  2. Preheat a cooking pan over medium/high heat and add cooking oil.
  3. Season the fish with sea salt, black pepper, and Creole seasoning, then coat with ¼ cup of flour.
  4. In a separate bowl, whisk together the eggs and heavy whipping cream until smooth.
  5. Prepare two large zip lock bags; in one, combine 1 cup of flour, garlic powder, and cilantro flakes, and in the other, combine panko and Italian breadcrumbs.
  6. Coat the fish in the egg mixture, then transfer to the flour bag and coat evenly.
  7. Return the fish to the egg mixture, then coat in the breadcrumb bag.
  8. Cook each piece of fish for 3 to 4 minutes on each side until golden brown and crispy.
  9. Serve hot.
