Fish Sticks

The fish

white fish (such as cod, snapper or tilapia)
The coating

eggs, whisked

blanched almond flour

celtic sea salt
The cooking oil

olive oil or coconut oil
Instructions
- Rinse the fish fillets in cold water and place them on a plate.
- Cut the fish into 1 inch by 5 inch pieces, removing any bones.
- Place the whisked eggs in one dish and the almond flour mixed with salt in another.
- Dip the fish sticks in the egg, then in the flour mixture, and place them on a plate.
- Heat 3 tablespoons of oil in a large skillet over medium-high heat.
- Add half of the fish sticks to the pan, ensuring they are not crowded.
- Cook for a few minutes on each side until well browned, then remove to a plate lined with paper towels.
- Add the remaining 3 tablespoons of oil to the pan and fry the remaining fish sticks.
- Serve with ketchup.
