Ingredients

The Fish Sticks

  • 1 lb cod fillets or white fish
  • 2 whole eggs
  • 1 cup King Arthur Almond Flour
  • 2 Tbsp King Arthur Coconut Flour
  • tsp garlic powder
  • tsp onion powder
  • 1 tsp sweet or smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • as needed spray olive oil or avocado oil cooking spray

The Tartar Sauce

  • ½ cup mayonnaise
  • 3 Tbsp finely chopped dill pickles
  • 2 tsp fresh dill or ¾ tsp. dried dill
  • 1 Tbsp lemon juice
  • ¼ tsp garlic powder
  • a pinch black pepper
  • 1 tsp honey or maple syrup (optional)

Instructions

  1. Preheat the oven to 425ºF and prepare a baking sheet with parchment paper and cooking spray.
  2. Pat the fish dry with a paper towel and cut it into pieces.
  3. In a shallow dish, whisk the eggs and in another dish, mix the almond flour, coconut flour, garlic powder, onion powder, paprika, salt, and pepper.
  4. Set up an assembly line with fish, egg wash, breading, and baking pan.
  5. Dip each fish piece in the egg wash, then coat with the breading and place it on the prepared pan.
  6. Spray the breaded fish sticks with cooking spray and bake for 8 minutes.
  7. Flip the fish sticks, spray again, and bake for an additional 5-6 minutes, broiling for 1-2 minutes if desired for extra crispiness.
  8. While the fish is baking, mix all tartar sauce ingredients in a bowl and refrigerate.
  9. Serve the baked fish sticks warm with tartar sauce and lemon wedges.
