Instructions
- Cut the cod into strips, about 1 inch wide by 3 inches long, and pat dry with paper towels.
- Set up three shallow bowls: one with coconut flour, one with whisked eggs, and the last with a mixture of crushed pork rinds, lemon pepper seasoning, and paprika.
- Dredge each cod strip in coconut flour, dip in the egg, and then coat with the pork rind mixture. Repeat with all pieces.
- Heat oil in a large skillet over medium heat and fry the fish sticks in a single layer for 2-3 minutes on each side until golden and cooked through.
