Ingredients

The fish and batter

  • 1 lb Cod fillets
  • 2 tbsp Wholesome Yum Coconut Flour
  • 2 large Eggs
  • 1.75 oz Pork rinds (crushed)
  • ½ tbsp Lemon pepper seasoning
  • ½ tsp Paprika

The frying oil

  • ¼ cup Avocado oil

Instructions

  1. Cut the cod into strips, about 1 inch wide by 3 inches long, and pat dry with paper towels.
  2. Set up three shallow bowls: one with coconut flour, one with whisked eggs, and the last with a mixture of crushed pork rinds, lemon pepper seasoning, and paprika.
  3. Dredge each cod strip in coconut flour, dip in the egg, and then coat with the pork rind mixture. Repeat with all pieces.
  4. Heat oil in a large skillet over medium heat and fry the fish sticks in a single layer for 2-3 minutes on each side until golden and cooked through.
