Ingredients

The fish

  • pounds boneless skinless white fish fillets
  • Diamond Crystal to taste kosher salt

The coating

  • 6 ounces plantain chips
  • 2 large eggs
  • 2 tablespoons cassava flour
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Avocado oil for spraying cooking spray

Instructions

  1. Pat the fish fillets dry and cut them into strips.
  2. Sprinkle salt on both sides of the fish.
  3. Process the plantain chips into a coarse powder to make crumbs.
  4. Set up a wire rack in a baking sheet.
  5. In a shallow bowl, place half of the plantain crumbs.
  6. In another dish, whisk together eggs, cassava flour, spices, and salt.
  7. Dip the fish strips in the egg mixture, then coat with plantain crumbs.
  8. Place the coated fish on the wire rack.
  9. Preheat the air fryer to 400°F and spray the fish sticks with avocado oil.
  10. Air fry the fish sticks for 7 to 9 minutes, flipping halfway through.
