Instructions
- Pat the fish fillets dry and cut them into strips.
- Sprinkle salt on both sides of the fish.
- Process the plantain chips into a coarse powder to make crumbs.
- Set up a wire rack in a baking sheet.
- In a shallow bowl, place half of the plantain crumbs.
- In another dish, whisk together eggs, cassava flour, spices, and salt.
- Dip the fish strips in the egg mixture, then coat with plantain crumbs.
- Place the coated fish on the wire rack.
- Preheat the air fryer to 400°F and spray the fish sticks with avocado oil.
- Air fry the fish sticks for 7 to 9 minutes, flipping halfway through.
