Red Snapper with a Lobster Cream Sauce

Ingredients

The fish

  • 12 ounce red snapper fillets

The sauce

  • 4 ounce cooked lobster meat
  • 1 cup heavy cream
  • ½ teaspoon old bay seasoning
  • to taste sea salt
  • to taste black pepper
  • 1 teaspoon chopped Italian parsley

The greens

  • 4 cups supergreens

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place the red snapper fillets in a baking dish with a little water.
  3. Season the snapper with sea salt and black pepper, and drizzle with olive oil if desired.
  4. Bake the fish for 15-20 minutes.
  5. In a sauté pan, add heavy cream and old bay seasoning, and reduce on medium-low heat for about 5 minutes.
  6. Add in the lobster and continue to reduce for another 5 minutes until the sauce is reduced by 40-50%.
  7. Turn off the heat and let the sauce rest until the fish is done.
  8. Sauté the greens in olive oil or water, seasoning with sea salt and black pepper as needed.
  9. Once the snapper is cooked, plate the greens, then the snapper, and spoon over the lobster sauce.
  10. Garnish with chopped parsley and serve with your favorite grain or potato.
