Red Snapper with a Lobster Cream Sauce

Instructions
- Preheat the oven to 350 degrees.
- Place the red snapper fillets in a baking dish with a little water.
- Season the snapper with sea salt and black pepper, and drizzle with olive oil if desired.
- Bake the fish for 15-20 minutes.
- In a sauté pan, add heavy cream and old bay seasoning, and reduce on medium-low heat for about 5 minutes.
- Add in the lobster and continue to reduce for another 5 minutes until the sauce is reduced by 40-50%.
- Turn off the heat and let the sauce rest until the fish is done.
- Sauté the greens in olive oil or water, seasoning with sea salt and black pepper as needed.
- Once the snapper is cooked, plate the greens, then the snapper, and spoon over the lobster sauce.
- Garnish with chopped parsley and serve with your favorite grain or potato.
