Grilled Whole Red Snapper

Instructions
- Preheat the grill.
- Rinse and dry the fish, seasoning both sides with salt, pepper, and oil, including the inside.
- Stuff the fish cavity with cilantro, crushed garlic, lime juice, and some lime slices.
- Pour remaining lime juice and minced garlic over the fish.
- Place the fish on oiled parchment paper and grill over indirect heat for 15-20 minutes, turning midway.
- In the last 3-5 minutes, move the fish to direct heat to crisp the skin.
- Remove when the internal temperature reaches 135°F and let it rest before serving.
