Grilled Whole Red Snapper

Ingredients

The fish and marinade

  • 1 medium sized whole red snapper
  • 3 tbs olive or canola oil
  • to taste salt
  • to taste pepper
  • 3 limes juice
  • 2–3 sliced limes
  • 3 cloves crushed garlic
  • ½ cup chopped cilantro

Other

  • 1 sheet parchment paper

Instructions

  1. Preheat the grill.
  2. Rinse and dry the fish, seasoning both sides with salt, pepper, and oil, including the inside.
  3. Stuff the fish cavity with cilantro, crushed garlic, lime juice, and some lime slices.
  4. Pour remaining lime juice and minced garlic over the fish.
  5. Place the fish on oiled parchment paper and grill over indirect heat for 15-20 minutes, turning midway.
  6. In the last 3-5 minutes, move the fish to direct heat to crisp the skin.
  7. Remove when the internal temperature reaches 135°F and let it rest before serving.
