Caribbean Grilled Whole Red Snapper

Ingredients

The fish

  • 1-2 whole red snapper
  • 1-2 fresh lemons
  • salt to taste
  • pepper to taste

The marinade

  • 1 teaspoon ground white pepper
  • 1 teaspoon ground allspice
  • 1 tablespoon garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon paprika
  • 2 teaspoons thyme, finely chopped
  • ½ cup basil or parsley, coarsely chopped
  • 1 teaspoon chicken bouillon (optional)
  • ¼ cup cooking oil

The sides

  • as desired grilled plantains and/or vegetables

Instructions

  1. Make three to four diagonal cuts on each side of the fish and season with salt, pepper, and lemon juice.
  2. In a bowl, mix white pepper, allspice, minced garlic, ginger, paprika, thyme, basil or parsley, chicken bouillon, and oil to create the marinade.
  3. Pour the marinade over the fish, ensuring it is coated inside and out, and let it marinate in the fridge for up to 24 hours.
  4. Preheat the grill to high heat and oil the grill basket.
  5. Place the fish in the basket and grill for 1-2 minutes on each side.
  6. Reduce the heat to medium-high, cover the grill, and baste the fish with marinade as it cooks.
  7. Cook for a total of 3-4 minutes on each side or until the fish is cooked through and juices run clear.
  8. Serve with grilled vegetables or plantains, if desired.
