Instructions
- Make three to four diagonal cuts on each side of the fish and season with salt, pepper, and lemon juice.
- In a bowl, mix white pepper, allspice, minced garlic, ginger, paprika, thyme, basil or parsley, chicken bouillon, and oil to create the marinade.
- Pour the marinade over the fish, ensuring it is coated inside and out, and let it marinate in the fridge for up to 24 hours.
- Preheat the grill to high heat and oil the grill basket.
- Place the fish in the basket and grill for 1-2 minutes on each side.
- Reduce the heat to medium-high, cover the grill, and baste the fish with marinade as it cooks.
- Cook for a total of 3-4 minutes on each side or until the fish is cooked through and juices run clear.
- Serve with grilled vegetables or plantains, if desired.
