Ingredients

The base

  • 5 large eggs
  • 1 cup 2% milk
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The filling

  • 1 lb. Jimmy Dean All Natural Ground Sausage
  • 1 tablespoon butter, unsalted
  • 1 cup yellow onion, sliced
  • ½ cup red pepper, diced
  • 4 large croissants, torn
  • 1 cup shredded cheddar cheese

Garnishes

  • to taste green onions
  • to taste parsley

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together eggs, milk, dijon mustard, garlic, salt, and pepper in a medium bowl and set aside.
  3. In a large skillet over medium-high heat, cook the sausage until browned, about 5-7 minutes, then remove it and place it in a baking dish.
  4. In the same skillet, add butter and onions, cooking until caramelized, about 5 minutes.
  5. Layer the caramelized onions over the sausage in the baking dish.
  6. Add diced red pepper and half of the cheddar cheese on top.
  7. Pour the egg mixture over the layers in the baking dish and gently shake to spread it evenly.
  8. Top with torn croissant pieces and the remaining cheese.
  9. Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 5-10 minutes until the inside is mostly firm.
  10. Let it rest for 5 minutes before serving, garnishing with green onions or parsley.
