Croissant Breakfast Casserole with Sausage

Instructions
- Preheat the oven to 350°F.
- Whisk together eggs, milk, dijon mustard, garlic, salt, and pepper in a medium bowl and set aside.
- In a large skillet over medium-high heat, cook the sausage until browned, about 5-7 minutes, then remove it and place it in a baking dish.
- In the same skillet, add butter and onions, cooking until caramelized, about 5 minutes.
- Layer the caramelized onions over the sausage in the baking dish.
- Add diced red pepper and half of the cheddar cheese on top.
- Pour the egg mixture over the layers in the baking dish and gently shake to spread it evenly.
- Top with torn croissant pieces and the remaining cheese.
- Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for an additional 5-10 minutes until the inside is mostly firm.
- Let it rest for 5 minutes before serving, garnishing with green onions or parsley.
