Vegan Snickers Pancakes

Ingredients

The pancakes

  • ½ cup unbleached flour
  • 3 Tbsp whole wheat flour
  • cup rolled oats
  • 1 Tbsp sugar
  • ½ Tbsp baking powder
  • 1 pinch salt
  • 1 cup light vanilla soy milk
  • 1 Tbsp canola oil
  • ¼ cup roasted peanuts (roughly chopped)
  • ¼ cup dairy-free semisweet chocolate chips

The caramel sauce

  • 1 cup sugar
  • ¼ cup water
  • ¼ cup vanilla soy creamer
  • 1 pinch salt

Instructions

  1. Heat a griddle to medium.
  2. In a large bowl, mix the flours, oats, baking powder, salt, and sugar.
  3. Add soy milk and canola oil, stirring until just combined. Adjust with more oats or flour if needed.
  4. Fold in half of the peanuts and chocolate chips, reserving the rest for serving.
  5. Spoon ¼ cup of batter onto the greased griddle and cook until bubbles appear, then flip and cook for another 1-2 minutes.
  6. To serve, stack pancakes with peanuts and chocolate chips in between, and drizzle with caramel sauce.
  7. For the caramel sauce, cook sugar and water in a saucepan until dark amber, swirling the pan without stirring.
  8. Reduce heat and carefully add the creamer and salt, stirring to combine, then cool before serving.
