Vegan Snickers Pancakes

The caramel sauce

vanilla soy creamer

Instructions
- Heat a griddle to medium.
- In a large bowl, mix the flours, oats, baking powder, salt, and sugar.
- Add soy milk and canola oil, stirring until just combined. Adjust with more oats or flour if needed.
- Fold in half of the peanuts and chocolate chips, reserving the rest for serving.
- Spoon ¼ cup of batter onto the greased griddle and cook until bubbles appear, then flip and cook for another 1-2 minutes.
- To serve, stack pancakes with peanuts and chocolate chips in between, and drizzle with caramel sauce.
- For the caramel sauce, cook sugar and water in a saucepan until dark amber, swirling the pan without stirring.
- Reduce heat and carefully add the creamer and salt, stirring to combine, then cool before serving.
