Ingredients

Dry Ingredients

  • 1 ¾ cup all-purpose flour (gluten-free if needed)
  • 1 ½ tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 cup milk of choice
  • 6 Tbsp melted butter
  • 1 large egg
  • 1 tsp honey

Mix-ins

  • ¾ cup diced ham
  • ½ cup sharp cheddar cheese (shredded)
  • ¾ cup yellow corn
  • ¼ cup fresh herbs (roughly chopped)
  • 2 pieces green onion (thinly sliced)
  • cup shredded zucchini (optional)

Instructions

  1. Preheat the oven to 350℉ and prepare a muffin pan with liners or cooking spray.
  2. In a medium bowl, combine the flour, baking powder, and salt.
  3. In a small bowl, whisk together the milk, melted butter, egg, and honey.
  4. Combine the wet ingredients with the dry ingredients, then fold in the ham, cheese, corn, herbs, green onion, and optional zucchini.
  5. Scoop the mixture into the muffin pan, filling each well at least ¾ full.
  6. Optionally, top each muffin with extra cheese, ham, corn, and chives.
  7. Bake for 20-24 minutes until the muffins are set and golden brown on top.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
