Instant Pot Cilantro Lime Rice

Butter (or 2 tsp olive oil)

Instructions
- Rinse the rice until the water runs clear.
- Add the rice to the pot along with water, salt, garlic, and dot the butter on top.
- Seal the pot and set the steam release knob to Sealing. Press the Rice button or set to LOW pressure for 12 minutes.
- Perform a Quick Release of the pressure when done.
- If using HIGH pressure, set for 3 minutes, then let it do a 10-minute natural release before manually releasing the remaining pressure.
- When the pin drops, open the pot and fluff the rice with a fork. Add lime juice, lime zest, and cilantro, mixing well.
- Serve as a side dish or with tacos, burritos, or in burrito bowls.
