Instant Pot Cilantro Lime Rice

Ingredients

  • 2 cups Long Grain White Rice, well rinsed
  • 2 cups Water
  • 1 ¼ tsp Kosher Salt (or ¾ tsp table salt)
  • 1 clove Garlic, pressed or finely minced
  • 1 Tbsp Butter (or 2 tsp olive oil)
  • 3 Tbsp Lime Juice (fresh)
  • Zest of 1 Lime
  • ¾ cup Cilantro Leaves, finely chopped

Instructions

  1. Rinse the rice until the water runs clear.
  2. Add the rice to the pot along with water, salt, garlic, and dot the butter on top.
  3. Seal the pot and set the steam release knob to Sealing. Press the Rice button or set to LOW pressure for 12 minutes.
  4. Perform a Quick Release of the pressure when done.
  5. If using HIGH pressure, set for 3 minutes, then let it do a 10-minute natural release before manually releasing the remaining pressure.
  6. When the pin drops, open the pot and fluff the rice with a fork. Add lime juice, lime zest, and cilantro, mixing well.
  7. Serve as a side dish or with tacos, burritos, or in burrito bowls.
