Cilantro Lime Rice

Instructions
- Heat olive oil in a large pot over medium heat.
- Add rice and cook for 1-2 minutes until lightly toasted.
- Stir in minced garlic and cook for one minute.
- Add cumin, water, salt, and pepper, then bring to a boil.
- Cover the pot, reduce heat to low, and simmer for 15 minutes until rice is tender.
- Uncover, stir in lime juice and cilantro, then fluff the rice with a fork.
- Garnish with cilantro sprigs and lime wedges if desired, then serve.
