Ingredients

The rice

  • 1 tablespoon olive oil
  • cups long grain white rice, uncooked
  • 3 cups water

The flavorings

  • 2 teaspoons minced garlic
  • 1 teaspoon ground cumin
  • teaspoons salt
  • ¼ teaspoon pepper
  • 2 tablespoons lime juice
  • cup cilantro leaves, chopped

For garnish (optional)

  • cilantro sprigs
  • lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add rice and cook for 1-2 minutes until lightly toasted.
  3. Stir in minced garlic and cook for one minute.
  4. Add cumin, water, salt, and pepper, then bring to a boil.
  5. Cover the pot, reduce heat to low, and simmer for 15 minutes until rice is tender.
  6. Uncover, stir in lime juice and cilantro, then fluff the rice with a fork.
  7. Garnish with cilantro sprigs and lime wedges if desired, then serve.
