Cilantro Lime Rice

Ingredients

The rice

  • 1 cup uncooked long-grain white rice
  • 2 cups vegetable broth

The flavorings

  • 1 teaspoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon lime zest
  • 2 teaspoons freshly squeezed lime juice
  • 1 tablespoon freshly squeezed lime juice
  • 2 teaspoons granulated sugar
  • 4 tablespoons fresh chopped cilantro

Instructions

  1. Combine rice, butter, garlic, lime zest, 2 teaspoons of lime juice, and broth in a saucepan.
  2. Bring the mixture to a boil.
  3. Cover and cook on low for 15-20 minutes until the rice is tender.
  4. Remove from heat.
  5. In a small bowl, whisk together the remaining lime juice, sugar, and cilantro.
  6. Pour the mixture over the hot cooked rice and fluff as you mix it in.
  7. Serve warm.
