Cilantro Lime Rice

Instructions
- Zest and juice the lime into separate bowls.
- Combine lime juice with chicken broth to make 2 cups of liquid.
- In a medium saucepan, melt butter over medium heat.
- Add rice and stir until well-coated.
- Pour in the chicken broth and lime juice mixture, then add salt.
- Cover and bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Once cooked, stir in half of the lime zest and cilantro, adjusting to taste.
- Serve and enjoy!
