Cilantro Lime Rice

Ingredients

  • 1 cup long-grain rice
  • 1 lime lime
  • scant 2 cups chicken broth
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ cup chopped cilantro

Instructions

  1. Zest and juice the lime into separate bowls.
  2. Combine lime juice with chicken broth to make 2 cups of liquid.
  3. In a medium saucepan, melt butter over medium heat.
  4. Add rice and stir until well-coated.
  5. Pour in the chicken broth and lime juice mixture, then add salt.
  6. Cover and bring to a boil, then reduce heat to low and simmer for 20 minutes.
  7. Once cooked, stir in half of the lime zest and cilantro, adjusting to taste.
  8. Serve and enjoy!
