Cilantro Lime Rice

The rice

long-grain jasmine rice

The seasoning

extra-virgin olive oil

Instructions
- Combine rice, water, and 1 teaspoon of olive oil in a saucepan.
- Bring to a boil, cover, and reduce heat to simmer for 20 minutes.
- Uncover and fluff the rice with a fork.
- Add garlic, scallions, and lime zest, stirring to combine.
- Let cool for 1 minute, then add remaining olive oil, salt, lime juice, cilantro, and optional red pepper flakes or jalapeño.
- Stir to combine and season to taste.
