Ingredients

The rice

  • 2 cups long grain rice
  • 1 cup water
  • 1 ¼ cups chicken broth
  • ¼ teaspoon salt
  • 3 tablespoons unsalted butter, melted

The flavoring

  • ¼ cup cilantro leaves, chopped
  • 4 tablespoons fresh lime juice

Instructions

  1. Rinse the rice thoroughly with cold water and drain several times until the water runs clear.
  2. Transfer the cleaned rice to a skillet and add water, chicken broth, salt, and melted butter.
  3. Cover the skillet and cook on medium heat for about 15 minutes, or until the water has evaporated and the rice is cooked.
  4. Turn off the heat and add cilantro leaves and lime juice to the rice.
  5. Stir to mix well and serve warm.
