Instructions
- Heat olive oil in a pot over medium heat.
- Add garlic, onion, and lime zest, and sauté for a minute.
- Toast the rice in the olive oil for 2-3 minutes.
- Add chicken stock and lime juice, then bring to a boil.
- Reduce heat to a simmer, cover, and cook for 20 minutes.
- Remove from heat and let it rest for 10 minutes without lifting the lid.
- Fluff the rice with a fork, add cilantro, and season with salt to taste before serving.
