Cilantro Lime Rice

Ingredients

  • 2 cups Parboiled Brown Rice
  • 4 cups Low Sodium Chicken Stock
  • ½ onion finely chopped
  • 1 tbsp Garlic minced
  • zest of 1 Lime
  • 2 limes Juice
  • 2 tbsp Olive Oil
  • to taste salt
  • cup Cilantro finely chopped

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add garlic, onion, and lime zest, and sauté for a minute.
  3. Toast the rice in the olive oil for 2-3 minutes.
  4. Add chicken stock and lime juice, then bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for 20 minutes.
  6. Remove from heat and let it rest for 10 minutes without lifting the lid.
  7. Fluff the rice with a fork, add cilantro, and season with salt to taste before serving.
