Creamy Tahini Dressing

Ingredients

  • ¼ cup extra-virgin olive oil
  • ¼ cup tahini
  • 2 to 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons maple syrup or honey
  • ½ teaspoon fine sea salt
  • to taste freshly ground black pepper
  • 2 tablespoons ice-cold water

Instructions

  1. Combine olive oil, tahini, lemon juice, mustard, maple syrup, salt, and black pepper in a jar or measuring cup.
  2. Whisk until thoroughly blended.
  3. Add cold water and whisk again until creamy.
  4. Taste and adjust seasoning with more lemon juice or pepper if desired.
  5. If too thick, add more cold water a tablespoon at a time.
  6. Serve immediately or store in the refrigerator for up to a week.
