Creamy Vegan Vegetable Soup

Instructions
- Heat olive oil in a large pot on medium-high heat for 1 minute, then add onions and cook until translucent.
- Add carrots, celery, garlic, ginger, and potatoes to the pot, cooking for 5 minutes while stirring frequently.
- Add zucchini and cook for an additional 5 minutes, stirring often.
- Move the browned vegetables to the sides of the pot and add vegetable stock paste, cooking for 1 minute before mixing everything together.
- Season with salt, pepper, turmeric, chili flakes, cauliflower, and butternut squash, stirring until well coated.
- Increase heat to high, add hot water and bay leaves, and bring to a boil. Then, lower the heat and simmer with the lid on for 25 minutes or until potatoes are tender.
- While the soup simmers, prepare the chickpeas by combining all chickpea ingredients in a separate pot and cooking on medium-high heat for about 5 minutes with the lid on.
- Remove the lid, increase heat to high, and cook for an additional 5-6 minutes until crispy, stirring often.
- Once the potatoes are tender, add coconut milk and lime juice to the soup, stirring to combine.
- Check for seasoning before serving, and top with chickpeas, cilantro, and a drizzle of olive oil.
