Creamy Vegan Vegetable Soup

Ingredients

The soup

  • 2 tbsp olive oil
  • 1 large white onion, finely chopped
  • 3 medium-sized carrots, roughly chopped
  • 3 stalks celery, roughly chopped
  • 3 large garlic cloves, finely chopped
  • 2 inches fresh ginger, grated or finely chopped
  • 2 medium-sized potatoes, roughly chopped
  • 1 large zucchini, roughly chopped
  • 1-2 tbsp vegetable stock paste
  • tsp Nature's Way Turmeric
  • ½ tsp chili flakes
  • ½ head medium-sized cauliflower, cut into florets
  • ½ small butternut squash, cut into cubes
  • 4-5 cups hot water
  • 2 bay leaves
  • 1 400 ml can coconut milk
  • ½ lime juice

The chickpeas (optional)

  • 1 400 ml can chickpeas, washed and dried
  • 1 tbsp olive oil
  • 1 tsp ginger powder
  • ½ lime juice
  • 1 tsp Nature's Way Turmeric Powder

For serving

  • cilantro
  • olive oil

Instructions

  1. Heat olive oil in a large pot on medium-high heat for 1 minute, then add onions and cook until translucent.
  2. Add carrots, celery, garlic, ginger, and potatoes to the pot, cooking for 5 minutes while stirring frequently.
  3. Add zucchini and cook for an additional 5 minutes, stirring often.
  4. Move the browned vegetables to the sides of the pot and add vegetable stock paste, cooking for 1 minute before mixing everything together.
  5. Season with salt, pepper, turmeric, chili flakes, cauliflower, and butternut squash, stirring until well coated.
  6. Increase heat to high, add hot water and bay leaves, and bring to a boil. Then, lower the heat and simmer with the lid on for 25 minutes or until potatoes are tender.
  7. While the soup simmers, prepare the chickpeas by combining all chickpea ingredients in a separate pot and cooking on medium-high heat for about 5 minutes with the lid on.
  8. Remove the lid, increase heat to high, and cook for an additional 5-6 minutes until crispy, stirring often.
  9. Once the potatoes are tender, add coconut milk and lime juice to the soup, stirring to combine.
  10. Check for seasoning before serving, and top with chickpeas, cilantro, and a drizzle of olive oil.
