The Creamiest Vegan Soup

Instructions
- Heat the olive oil in a heavy-bottomed soup pan over medium heat.
- Add the chopped onions and salt, cooking for about 7 minutes until translucent.
- Stir in the turmeric and mustard seeds, cooking for an additional couple of minutes.
- Add 2 cups of water and bring to a simmer, then stir in the cauliflower.
- Cover and steam the cauliflower for 10-15 minutes.
- Add the remaining water and nutritional yeast, and let simmer uncovered for about 5 minutes.
- Blend the soup until smooth, adding more water if necessary.
- Taste and adjust seasoning with salt and black pepper.
- Serve topped with lime juice, yellow split peas, and your choice of toppings.
