Ingredients

The soup base

  • 2 tablespoons extra virgin olive oil
  • 1 ½ cups yellow onions, chopped
  • 1 ½ teaspoons fine grain sea salt
  • 1 ½ teaspoons ground turmeric
  • 1 ½ teaspoons mustard seeds (optional)
  • 7 cups water
  • 1 large head cauliflower, cut into florets
  • 2 tablespoons nutritional yeast
  • black pepper to taste

The toppings

  • 2 cups yellow split peas, cooked
  • freshly squeezed lime to taste
  • black pepper to taste
  • crushed croutons to taste
  • seeds to taste
  • crumbled kale chips to taste

Instructions

  1. Heat the olive oil in a heavy-bottomed soup pan over medium heat.
  2. Add the chopped onions and salt, cooking for about 7 minutes until translucent.
  3. Stir in the turmeric and mustard seeds, cooking for an additional couple of minutes.
  4. Add 2 cups of water and bring to a simmer, then stir in the cauliflower.
  5. Cover and steam the cauliflower for 10-15 minutes.
  6. Add the remaining water and nutritional yeast, and let simmer uncovered for about 5 minutes.
  7. Blend the soup until smooth, adding more water if necessary.
  8. Taste and adjust seasoning with salt and black pepper.
  9. Serve topped with lime juice, yellow split peas, and your choice of toppings.
