Ingredients

The shrimp seasoning

  • 1 pound medium shrimp, peeled and deveined
  • 1 ½ tablespoons paprika
  • 1 teaspoon dried thyme
  • ½-1 teaspoon oregano, flaked
  • 2 teaspoons garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • to taste salt

The pasta and sauce

  • 8 ounces spaghetti or fettuccine
  • 2 tablespoons butter or olive oil
  • ½ medium onion, sliced
  • 2-3 medium tomatoes, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon Creole spice or blackened spice
  • 1 medium red or green bell pepper, sliced
  • 1 cup chicken broth
  • to taste salt
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons chopped parsley, for garnishing (optional)

Instructions

  1. Boil the pasta in a large pot according to the package instructions, then drain and set aside.
  2. Season the shrimp generously with blackened spices and salt.
  3. Heat oil or butter in a heavy-bottomed Dutch oven over medium heat and sauté the shrimp for 3-5 minutes, then set aside.
  4. In the same pot, add onions, tomatoes, and garlic, stirring for about a minute.
  5. Add thyme, paprika, Creole or blackened spice, bell peppers, chicken broth, salt, and Worcestershire sauce, then bring to a boil.
  6. Simmer the sauce for about 7-10 minutes.
  7. Mix the cooked pasta with the sauce or serve the blackened shrimp on top, garnished with parsley if desired.
