  • 1 lb. dried pasta
  • 1 lb. raw shrimp, peeled and deveined
  • 2–3 Tbsp. blackening powder
  • 1 Tbsp. olive oil
  • ¼ cup toasted pine nuts

Asparagus-Spinach Pesto Ingredients

  • 1 bunch asparagus spears
  • 3 cups baby spinach leaves
  • 4 cloves garlic
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup toasted pine nuts
  • 2 Tbsp. lemon juice
  • ½ teaspoon salt
  • ½ cup extra-virgin olive oil

Instructions

  1. Cook the pasta in salted boiling water until al dente.
  2. Toss shrimp with blackening powder and sauté in olive oil until cooked through.
  3. Reserve ½ cup of pasta water, then drain the pasta.
  4. Combine pasta with pesto and add reserved pasta water if needed.
  5. Stir in the shrimp and toasted pine nuts, then serve with extra Parmesan cheese.
