Perfect Roast Turkey

Ingredients

The Turkey

  • 1 15 pound frozen turkey, thawed, neck, heart, and gizzards removed
  • ½ cup kosher salt
  • 2 tablespoons baking powder
  • 4 tablespoons butter, softened
  • 4 tablespoons butter, melted
  • 1 bunch fresh sage
  • to taste freshly ground black pepper
  • ½ cup olive oil

The Gravy

  • 7 cups chicken broth or turkey broth
  • ¼ cup cornstarch
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Rinse the thawed turkey well and pat dry.
  2. Mix kosher salt and baking powder, then sprinkle over the turkey.
  3. Refrigerate the turkey uncovered for 12 to 24 hours.
  4. Let the turkey sit at room temperature for 2 hours before roasting.
  5. Preheat the oven to 425°F and prepare a basting mixture of melted butter and olive oil.
  6. Loosen the skin of the turkey and spread half of the softened butter underneath.
  7. Insert sage leaves between the skin and the breast, and place the remaining sage in the cavity.
  8. Truss the turkey and rub the remaining butter over it.
  9. Place the turkey in a roasting pan and add 1 inch of water to the bottom.
  10. Lower the oven temperature to 325°F and roast for 3 to 3½ hours, basting every hour.
  11. Check for doneness with a thermometer after 2½ hours.
  12. Let the turkey rest for 30 minutes after removing it from the oven.
  13. For the gravy, simmer the pan drippings with broth and strain.
  14. Make a cornstarch slurry and whisk it into the simmering liquid until thickened.
  15. Carve the turkey and serve with gravy.
