Perfect Roast Turkey

The Turkey

frozen turkey, thawed, neck, heart, and gizzards removed

The Gravy

chicken broth or turkey broth

cornstarch

Instructions
- Rinse the thawed turkey well and pat dry.
- Mix kosher salt and baking powder, then sprinkle over the turkey.
- Refrigerate the turkey uncovered for 12 to 24 hours.
- Let the turkey sit at room temperature for 2 hours before roasting.
- Preheat the oven to 425°F and prepare a basting mixture of melted butter and olive oil.
- Loosen the skin of the turkey and spread half of the softened butter underneath.
- Insert sage leaves between the skin and the breast, and place the remaining sage in the cavity.
- Truss the turkey and rub the remaining butter over it.
- Place the turkey in a roasting pan and add 1 inch of water to the bottom.
- Lower the oven temperature to 325°F and roast for 3 to 3½ hours, basting every hour.
- Check for doneness with a thermometer after 2½ hours.
- Let the turkey rest for 30 minutes after removing it from the oven.
- For the gravy, simmer the pan drippings with broth and strain.
- Make a cornstarch slurry and whisk it into the simmering liquid until thickened.
- Carve the turkey and serve with gravy.
