Simple Herb Roasted Turkey

Ingredients

The turkey

  • 1 whole turkey (10-13 pounds)

The seasoning and aromatics

  • to taste coarse kosher salt
  • to taste freshly ground black pepper
  • ½ cup salted butter, softened
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 whole lemon, zested
  • 1 medium onion, quartered
  • 1 bunch parsley
  • 1-2 medium carrots, chopped into thirds
  • 1-2 stalks celery, chopped into thirds

Instructions

  1. Preheat the oven to 350°F.
  2. Remove giblets and neck from the turkey cavity and place the turkey on a rack in a roasting pan.
  3. Mix butter, thyme, and lemon zest in a small bowl.
  4. Season the turkey inside and out with salt and pepper, and stuff the cavity with lemon, onion, parsley, carrots, and celery.
  5. Loosen the skin around the turkey breast and place pieces of the butter mixture under the skin.
  6. Brush the remaining melted butter over the skin of the turkey.
  7. Roast the turkey for 2½ to 3 hours until the internal temperature reaches 165°F.
  8. Let the turkey rest for 15-20 minutes before carving.
