Simple Herb Roasted Turkey

fresh thyme (or 1 teaspoon dried)

Instructions
- Preheat the oven to 350°F.
- Remove giblets and neck from the turkey cavity and place the turkey on a rack in a roasting pan.
- Mix butter, thyme, and lemon zest in a small bowl.
- Season the turkey inside and out with salt and pepper, and stuff the cavity with lemon, onion, parsley, carrots, and celery.
- Loosen the skin around the turkey breast and place pieces of the butter mixture under the skin.
- Brush the remaining melted butter over the skin of the turkey.
- Roast the turkey for 2½ to 3 hours until the internal temperature reaches 165°F.
- Let the turkey rest for 15-20 minutes before carving.
