Herb Roasted Turkey

Ingredients

The turkey and stuffing

  • 15 lb turkey
  • 1 onion peeled and quartered
  • 1 lemon quartered
  • 1 cup assorted herbs whole sprigs

The herb butter

  • 10 tablespoons butter softened
  • 2 teaspoons minced garlic
  • 2 tablespoons finely chopped fresh sage leaves
  • 1 tablespoon finely chopped fresh rosemary
  • 2 tablespoons finely chopped fresh thyme leaves
  • ¼ cup finely chopped fresh parsley leaves
  • to taste salt and pepper

The broth

  • 3 cups chicken or turkey broth

Optional garnishes

  • to taste assorted herbs
  • to taste fresh cranberries
  • to taste seckel pears

Instructions

  1. Preheat the oven to 450°F.
  2. Let the turkey stand at room temperature for 30 minutes and tuck the wings under the body.
  3. Blend the butter, garlic, sage, rosemary, thyme, parsley, and salt and pepper in a food processor until smooth.
  4. Season the cavity of the turkey with salt and pepper, then stuff with onion, lemon, and assorted herbs.
  5. Tie the turkey legs together with kitchen twine and rub the herb butter all over the turkey, including under the skin.
  6. Keep the chicken broth warm in a saucepan over low heat.
  7. Place the turkey in a roasting pan and bake for 45 minutes.
  8. Reduce the oven temperature to 350°F and continue roasting, basting every 30 minutes with the broth, until the turkey is done (about 3 hours).
  9. If the turkey browns too quickly, cover it with foil.
  10. Remove the turkey from the oven, tent with foil, and let it rest for 25 minutes before slicing and serving.
