Herb Roasted Turkey

The broth

chicken or turkey broth

Instructions
- Preheat the oven to 450°F.
- Let the turkey stand at room temperature for 30 minutes and tuck the wings under the body.
- Blend the butter, garlic, sage, rosemary, thyme, parsley, and salt and pepper in a food processor until smooth.
- Season the cavity of the turkey with salt and pepper, then stuff with onion, lemon, and assorted herbs.
- Tie the turkey legs together with kitchen twine and rub the herb butter all over the turkey, including under the skin.
- Keep the chicken broth warm in a saucepan over low heat.
- Place the turkey in a roasting pan and bake for 45 minutes.
- Reduce the oven temperature to 350°F and continue roasting, basting every 30 minutes with the broth, until the turkey is done (about 3 hours).
- If the turkey browns too quickly, cover it with foil.
- Remove the turkey from the oven, tent with foil, and let it rest for 25 minutes before slicing and serving.
