Roasted Eggplant + Za'atar Pizza

Ingredients

Tahini Spread

  • 3 Tbsp Tahini
  • 1 Tbsp Lemon Juice
  • 1 clove Garlic, minced
  • 1 pinch Salt
  • 1 pinch Pepper

Pizza Toppings

  • 1 medium Eggplant
  • 2 tsp Extra Virgin Olive Oil
  • 1 generous pinch Dried Oregano
  • 1 small Yellow Onion, halved and sliced
  • 1 whole Whole Grain Pizza Crust
  • ¾ Cup Shredded Mozzarella
  • 1 Tbsp Za'atar
  • Cup Crumbled Feta
  • 1 generous pinch Fresh Thyme Leaves
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  1. Preheat the oven to 500°F.
  2. Mix all tahini spread ingredients together in a bowl and set aside.
  3. Peel and cut the eggplant into small pieces, drizzle with olive oil, salt, and oregano, then toss to coat.
  4. Spread the eggplant on a baking sheet and roast for 15-20 minutes.
  5. To char the onions, heat a pan over medium-high heat, add a dash of oil, and cook the onions for 10-15 minutes until charred.
  6. Roll out the pizza crust on a floured/cornmeal sprinkled baking sheet.
  7. Spread the tahini mixture on the crust, then layer with mozzarella, roasted eggplant, charred onions, za'atar, and feta.
  8. Drizzle a bit of olive oil on top and bake for 12-15 minutes until the edges are crisp.
  9. Garnish with fresh thyme leaves before serving.
