Instructions
- Preheat the oven to 500°F.
- Mix all tahini spread ingredients together in a bowl and set aside.
- Peel and cut the eggplant into small pieces, drizzle with olive oil, salt, and oregano, then toss to coat.
- Spread the eggplant on a baking sheet and roast for 15-20 minutes.
- To char the onions, heat a pan over medium-high heat, add a dash of oil, and cook the onions for 10-15 minutes until charred.
- Roll out the pizza crust on a floured/cornmeal sprinkled baking sheet.
- Spread the tahini mixture on the crust, then layer with mozzarella, roasted eggplant, charred onions, za'atar, and feta.
- Drizzle a bit of olive oil on top and bake for 12-15 minutes until the edges are crisp.
- Garnish with fresh thyme leaves before serving.
