Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the ends off the zucchini and slice each lengthwise into thirds, making slices between ¼- and ½-inch thick.
- In a shallow bowl, whisk together the egg and milk.
- On a plate, combine panko, parmesan, Italian seasoning, salt, and pepper.
- Spread flour on another plate.
- Dredge each zucchini slice in flour, dip in the egg mixture, and coat with the panko mixture.
- Place the coated zucchini on the baking sheet and spray with oil.
- Bake for 30 minutes, flipping halfway through.
- Remove from the oven and turn on the broiler.
- Layer zucchini slices on the bottom halves of the bread and top with mozzarella.
- Broil until the bread is toasted and cheese is melted, about 3-5 minutes.
- Add marinara sauce over the cheese and sprinkle with basil.
- Press the top half of the bread onto the bottom half, cut into halves, and serve.
