Zucchini Parmesan Sandwiches

Ingredients

The zucchini

  • 2 medium zucchini

The breading

  • 1 large egg
  • 3 tablespoons milk
  • ¾ cup panko breadcrumbs
  • cup grated parmesan cheese
  • 2 teaspoons Italian seasoning
  • to taste salt and pepper
  • ¼ cup all-purpose flour
  • 1 spray oil mister or cooking spray

The sandwich

  • 1 loaf Italian bread or baguette
  • 4-6 slices mozzarella cheese
  • 1 cup marinara sauce
  • cup fresh basil, roughly chopped

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the ends off the zucchini and slice each lengthwise into thirds, making slices between ¼- and ½-inch thick.
  3. In a shallow bowl, whisk together the egg and milk.
  4. On a plate, combine panko, parmesan, Italian seasoning, salt, and pepper.
  5. Spread flour on another plate.
  6. Dredge each zucchini slice in flour, dip in the egg mixture, and coat with the panko mixture.
  7. Place the coated zucchini on the baking sheet and spray with oil.
  8. Bake for 30 minutes, flipping halfway through.
  9. Remove from the oven and turn on the broiler.
  10. Layer zucchini slices on the bottom halves of the bread and top with mozzarella.
  11. Broil until the bread is toasted and cheese is melted, about 3-5 minutes.
  12. Add marinara sauce over the cheese and sprinkle with basil.
  13. Press the top half of the bread onto the bottom half, cut into halves, and serve.
