Instructions
- Preheat the oven to 425°F and coat a sheet pan with cooking spray.
- In a bowl, toss the zucchini with olive oil to coat.
- Add breadcrumbs, salt, pepper, and parmesan cheese, and toss until the zucchini is well coated.
- Arrange the zucchini in a single layer on the sheet pan.
- Bake for 10-15 minutes until browned and tender.
- Serve immediately, optionally with marinara sauce for dipping.
