Ingredients

The zucchini

  • 1 lb zucchini, quartered and cut into sticks

The coating

  • 2 tablespoons olive oil
  • ½ cup breadcrumbs
  • cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

For baking

  • as needed cooking spray

Instructions

  1. Preheat the oven to 425°F and coat a sheet pan with cooking spray.
  2. In a bowl, toss the zucchini with olive oil to coat.
  3. Add breadcrumbs, salt, pepper, and parmesan cheese, and toss until the zucchini is well coated.
  4. Arrange the zucchini in a single layer on the sheet pan.
  5. Bake for 10-15 minutes until browned and tender.
  6. Serve immediately, optionally with marinara sauce for dipping.
