Ingredients

The zucchini

  • 2 medium Zucchini, sliced to ½ inch

The toppings

  • ¼ cup Panko Bread Crumbs
  • cup Parmesan cheese, grated

The cooking base

  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions

  1. Heat olive oil in a 12-inch cast iron skillet over medium-high heat.
  2. Place the zucchini in a single layer and brown on both sides.
  3. Add salt and pepper to the browned zucchini.
  4. Top the zucchini with Parmesan cheese and Panko bread crumbs.
  5. Transfer the skillet to the oven and broil for 2-3 minutes until the cheese is melted and brown.
