Ingredients

  • 2 whole zucchini
  • 1 tablespoon olive oil
  • 1 cup bread crumbs or Japanese panko
  • cup grated Parmesan cheese
  • 1 pinch salt
  • 3 dashes ground black pepper

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Combine the sliced zucchini with olive oil in a bowl.
  3. In a large bowl, mix bread crumbs or panko with Parmesan cheese, salt, and black pepper.
  4. Coat the zucchini slices with the breadcrumb mixture, ensuring both sides are covered.
  5. Transfer the zucchini to a baking sheet lined with parchment paper, arranging them closely.
  6. Sprinkle some leftover breadcrumb mixture on top of each slice.
  7. Bake for 10 minutes until the surface is brown.
  8. Remove from the oven and sprinkle the other side with the remaining breadcrumb mixture.
  9. Bake for another 10 minutes until browned, then serve immediately.
