Instructions
- Preheat the oven to 450°F (232°C).
- Combine the sliced zucchini with olive oil in a bowl.
- In a large bowl, mix bread crumbs or panko with Parmesan cheese, salt, and black pepper.
- Coat the zucchini slices with the breadcrumb mixture, ensuring both sides are covered.
- Transfer the zucchini to a baking sheet lined with parchment paper, arranging them closely.
- Sprinkle some leftover breadcrumb mixture on top of each slice.
- Bake for 10 minutes until the surface is brown.
- Remove from the oven and sprinkle the other side with the remaining breadcrumb mixture.
- Bake for another 10 minutes until browned, then serve immediately.
