Ingredients

The chips

  • 2 medium zucchini
  • ½ cup panko bread crumbs
  • ½ cup almond flour
  • ¼ cup Parmesan cheese or Vegan Parmesan
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper
  • 1 large egg
  • to drizzle extra-virgin olive oil

Optional serving

  • to serve Romesco, Tzatziki, or Marinara

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Whisk the egg in a small bowl.
  3. In a medium bowl, combine the panko, almond flour, Parmesan, salt, and pepper.
  4. Dip the zucchini slices into the egg and then into the panko mixture.
  5. Place the coated zucchini on the baking sheet, drizzle with olive oil, and bake for 17 to 20 minutes, flipping halfway through, until golden brown.
  6. Serve immediately while still hot, optionally with a dipping sauce.
