Instructions
- Preheat the oven to 200°F (93°C).
- Slice the zucchini into 1/8-inch thick slices and pat dry.
- Toss the zucchini slices in olive oil and sprinkle with salt.
- Arrange the zucchini slices in a single layer on baking racks set over cookie sheets.
- Bake for about 2 1/2 hours, rotating the pans halfway through.
- Allow chips to cool in the oven with the heat off and the door slightly open.
