Instructions
- Preheat the oven to 425°F.
- Grease a rimmed baking sheet with olive oil.
- In a shallow bowl, combine breadcrumbs and parmesan cheese.
- In a second bowl, whisk the egg.
- In a third bowl, mix flour, garlic powder, salt, and pepper.
- Slice the zucchini into ½-inch rounds.
- Dip each zucchini slice in the flour mixture, then in the egg, and finally coat with breadcrumbs.
- Place the coated zucchini slices on the baking sheet and repeat until all slices are coated.
- Spray the tops with cooking spray and bake for 20-25 minutes, flipping halfway through.
- Serve with your favorite dipping sauce.
